All Butter Choux Pastry Éclair Shell which is made from ‘scratch’ and not from a Pre-mix in order to provide an authentic taste. The Eclairs Shells are then dehydrated once baked in order to have a long shelf-life. The choux will need approx. 3-5 hrs to soften once filled as it will absorb the moisture from the filling.
